VIDEO RECIPE: Healthy zucchini gingerbread

A sweet dessert doesn’t have to be full of sugar! 🤩 You can try this healthy zucchini gingerbread you won’t be able to put away 🤤. Adding zucchini to gingerbread is a great trick to reduce the calorie value of the dessert and get some vitamins in during flu season too! 😷😋

INGREDIENTS:

175 g of zucchini
175 g whole wheat spelt flour
150 ml semi-skimmed milk
1 tbsp cocoa
1 tsp gingerbread spice
2 teaspoons baking powder
20 g ghee butter
2 eggs
50 g coconut sugar

METHOD:

Grate the zucchini coarsely and drain off the remaining water. Mix the flour with the cocoa and add the sugar, gingerbread spice, baking powder, eggs, ghee butter and milk. Mix everything together to make a smooth dough. Finally, add the grated zucchini. Pour into a greased and floured baking tin. Bake at 180°C/350°F for about 30 minutes. Top with melted chocolate and sprinkle with nuts. Enjoy!
